This recipe cannot get any simpler — just two steps and you’re ready to be served with a chilled, healthy afternoon snack!

Plus, it’s only 145 calories; this lemon-raspberry chia pudding is packed with fiber and protein — perfect snack to chill with friends! Did we mention it’s vegan too?

Ingredients:

1 tbsp chia seeds
1/2 cup soy milk
1/4 tsp lemon zest
1/4 cup fresh raspberries

Two-step recipe:

1) Pour ingredients into a bowl, mash and stir.
2) Cover and refrigerate for 2 hours or overnight.

Top with more raspberries and enjoy!
